VEGGIE AND BEAN SALAD
INGREDIENTS
- 1 cup of purple cabbage 
- 1 cup of cucumbers 
- 1 cup of bell peppers 
- 1 cup of broccoli 
- 1 can of rinsed and drained chickpeas 
- 1 can of rinsed and drained white beans 
- 1 shallot, minced 
- 1/2 cup fresh herbs, finely chopped ( I used basil, mint, & parsley) 
- 1/2 cup of olive oil 
- 1/3 cup of red wine vinegar 
- 2 tbsp of honey 
- 1 tsp of salt and pepper 
DIRECTIONS
- Prepare all your veggies by finely chopping them into about 1/8-inch pieces. Add them all to a large bowl. 
- In a small bowl combine your shallot, fresh herbs, oil, vinegar, honey, and salt and pepper. Whisk well. Pour over your veggies and give everything a good mix. Feel free to season with more salt and pepper to your liking!
