EASY AND SIMPLE QUINOA ELOTE SALAD
INGREDIENTS
- 2 1/2 cups of cooked quinoa 
- 1 bag of Trader Joe's roasted frozen corn, defrosted according to package 
- 1 jalapeno, minced. Remove the seeds and white part for less spicy. 
- 1/2 of a red onion, chopped 
- 1/4 cup of scallions, chopped 
- 1/2 cup of cilantro, chopped 
- 1/2 cup of crumbled cotija cheese 
- 1 tsp of chili powder 
- 1 tsp of garlic powder 
- 1 1/2 tsp of cumin 
- 1 tsp of salt and pepper 
- 1 /2 cup of plain greek yogurt 
- juice of two limes 
DIRECTIONS
- Prep and cook your quinoa and frozen corn according to the package. 
- While your quinoa is cooking, prep your salad ingredients. 
- Add the lime juice, yogurt, and spices to a large salad bowl. Whisk until combined. 
- Once your quinoa is done and slightly cooled, add the rest of your ingredients to the same bowl. 
- Give everything a good mix and enjoy!
